Black Bean Brownies

In this recipe, Amy Sotis, a local nutritionist, shows us how to make some delicious black bean brownies. I know what you’re thinking. “Black Beans in a brownie?! How could that taste good?” Brownies are traditionally made with lots of butter and flour. Black Beans surprisingly give the same texture as flour would, allowing the recipe to be gluten-free and healthier.

This healthy alternative to traditional brownies is a great way to satisfy sugary cravings and keep you on a healthier lifestyle.

Ingredients

  • 5 Eggs

  • 2 cans of Black Beans, rinsed

  • 1/4 cup Unsweetened Almond Milk

  • 1/2 cup Unsweetened Cocoa Powder

  • 3/4 cup Truvia (Stevia) Baking Blend

  • 1/2 tsp. Baking Soda

  • 1/4 tsp. Salt

  • 3 tbsp. Coconut Oil

Directions

  1. Preheat oven to 375 degrees

  2. Rinse black beans until water runs clear

  3. Add the eggs, black beans, and almond milk to the blender. Blend until puréed

  4. Add the rest of the ingredients to the blender. Blend until mixed

  5. Pour mixture into a greased 9×13″ pan & bake for 25-30 minutes, or until lightly firm and springy
